Chef's Restaurant A family-run institution for over a hundred years, it's still a favorite, thanks to its conviviality and generosity, and its commitment to regional identity and hospitality. Chef Matthieu Koenig offers a fine menu of local dishes, including a tartar of pink trout from Alsace with lovage, bibeleskæs of cucumber and horseradish, trout egg, sauerkraut of pink trout and smoked eel, beurre blanc with juniper berries, pigeon Rossini and duck foie gras, crispy sauerkraut and balsamic vinegar jus, red fruit sablé, light pistachio cream and almond milk ice cream. Well-stocked cellar with great references from all vineyards (Léon Barral, Bernard Gripa, Pibarnon, Tollot-Beaut, Pichon-Baron, Zind-Humbrecht, Trimbach, Zusslin, Deiss...).
