Gault&Millau's review 2025

One of Gérardmer’s most iconic institutions. Originally a stagecoach stop for horses in the 1840s, the site was quickly converted into a hotel and hosted Napoleon III, who came to inaugurate the Schlucht Pass road. Extensively restored, the property has retained all its prestige and remains, today as in the past, one of the must-visit stops on a getaway to the Vosges forests. This is thanks to the cozy comfort of its 76 rooms and suites, the charm of its Belle Époque chalet, and the excellence of its three restaurants (with a special mention for the remarkable gourmet dining at Pavillon P and its wine list featuring some 600 selections) under the guidance of chefs Thierry Longo and Patrice Paya, as well as its Les Chênes Blancs spa —450 m² featuring a hammam, sauna, two indoor pools, and one outdoor pool.
