Situated on the edge of a busy thoroughfare, this Laurier welcomes a largely loyal clientele. The sober, well-appointed dining room creates a calm, regular atmosphere, in keeping with the bistronomic spirit of the house. The cuisine unfolds through the Chef's Inspiration menu, offering a succession of plates with assertive associations. Chopped trout with citrus fruits, broccoli mousseline with wasabi and white miso velvet plays on acidity and spiciness, while ballotine of foie gras with beets, port and lychee explores a sweeter, spicier register. The market fish in a spice crust, creamy celery and Noilly Prat emulsion with yuzu butter is a masterful execution, before a dessert of Caribbean chocolate and pear, a fresh, gourmet conclusion. The wine list features a predominantly French selection, with an opening towards Spain and a particular emphasis on Loire Valley winemakers. The glass formats, offered in a range of capacities, provide appreciable flexibility, even if the wine is served without a dedicated sommelier. Service is fluid and well-paced.
