After a well-placed amuse-bouche, the fine raviole of winter vegetables with smoked broth favors delicacy, the capon stands out for its controlled cooking and assumed greediness, before a chocolate fondant, accompanied by a peanut sauce and miso ice cream, which concludes the meal with precision. A mignardise based on Nantais cake brings the meal to a close. The wine list features several references, with a selection built to accompany the cuisine, blending different regions and styles in a legible, coherent approach.
