Gilles Leininger learned from Émile Jung at Le Crocodile, from whom he gained experience and a taste for good food. His restaurant, which opened fifteen years ago, remains at the top level, proving year after year that he has lost none of his inspiration and savoir-faire. The chef mixes signature dishes and seasonal ideas, with an ever-pleasing marine sensibility. The five-course menu includes the essential artichoke starter, followed by crumbled Mediterranean crab, green beans from the Riedinger farm, langoustine velvet and wild garlic condiment, return of the peach and Riedinger farm tomatoes confit for six hours, a beautiful emulsion from a hollandaise, a filet of Normandy beef, barbajuan from a pissaladière, girolles and reduced jus. We finish with a beautiful chocolate crunch, buckwheat soufflé, herb sorbet and verbena emulsion. Very good direction in the dining room.
