It has now been seven years since Chef Thomas Koebel joined the restaurant, and we have witnessed a steady progression toward dishes that are increasingly consistent and meticulous, featuring logical and thoughtful concepts that blend regional influences with his personal vision. The service team, meanwhile, goes above and beyond to deliver a truly exceptional dining experience in the French tradition, led by a particularly confident Étienne Eyer. And the result is a generous experience of beautiful classicism, set in one of the most elegant hotels in northern Strasbourg. The €119 set menu offers good value for the money, featuring a lightly smoked foie gras escalope with porcini mushroom balls, Bandol balsamic vinegar, and blueberries; a redfish steak; knepfles with squid ink; sun-dried tomatoes, served with a rich saffron-infused bouillabaisse sauce and rouille ice cream. The Alsatian poultry with crayfish is beautifully reimagined, featuring chicken breast with Nantua sauce and parsnips, a modern take on “bouchée à la reine,” and a brioche club sandwich with mayonnaise made with crayfish shell oil. We finish with a lovely creation featuring mirabelle plums and hay, as well as a refreshing dessert of melon, cucumber, and verbena. An exceptional wine cellar, covering all regions with versatility, from VDF to the greatest estates.
