A well-known, well-frequented venue (the room even gets noisy pretty quickly), with regular entertainment. The team is close-knit and gives the impression of pleasing themselves by pleasing others. The chef's technique is sure-footed, handling textures with even more ease than flavors: frogs' leg cake, tuna tataki, trout, salmon and tuna mousse, trout gravelax, pork cheek confit, green rhubarb jelly, coral lentils, well-cooked turbot, summer truffle, rice chips, truffle cream, dill, fennel and cebette, low-temperature veal. The dessert tree is always spectacular when discovered for the first time, lacking a hair's breadth of finesse in execution. Well-stocked cellar with wines from all regions, with a choice by the glass from €6 to €12.
