Gault&Millau's review 2025

We know the Costes brothers for their Parisian addresses, but they've also set up shop in the popular seaside resort of Palavas-les-Flots, where they spent their childhood vacations. Between sand and garden, an immaculate, ultra-contemporary building unfolds around stacked cubes that make up 72 rooms and suites with magnificent sea views and beach hut decor. This ultra-premium location boasts a 27 m long swimming pool (heated all year round to 28°C), a 500 m2 spa with Jacuzzi, a beautiful private beach, two bars and a restaurant that attracts tourists and locals alike, who come to enjoy a Mediterranean version of the menu from the legendary Hôtel Costes in Paris.
