Twelve years since Pascal Bardet (originally from the Lot but having started his career with Ducasse, including five years at the Louis XV in Monaco) and his wife Sandrine took over this legendary restaurant. They have turned it into a veritable institution in the department and even the region. In fact, the restaurant's new address is "146... rue du Gindreau"! It's always a pleasure and an honor to dine here, both in summer on the shady panoramic terrace and in winter at truffle time in front of the crackling fireplace. It's clear that the chef is now fully at ease with his highly successful rustic-chic style, putting all his Ducassian savoir-faire to work in the service of fine produce, remarkable sauces and increasingly accomplished ideas. As technically irreproachable as ever, the dishes have become even more inspired: pheasant hen, macerated cabbage, bay leaf, leg fat, poached supreme, foie gras pressé; roast venison back, chestnut crumbs, fennel and coriander, endives with bacon, persimmon condiment, lemongrass, pepper sauce; soufflé in homage to Alexis Pélissou, with black truffles, flambéed in maraschino. A splendid cellar, built and commented on by the exquisite Margot Duffort, with prices to suit all budgets, and a comfortable interior combining rusticity and the contemporary, which has become even lighter with the arrival in autumn 2024 of original wooden tables and the removal of tablecloths.
