Chef's Restaurant Julien Poisot, forty-something chef at Château de Mercuès for 10 years, left this prestigious establishment in autumn 2024 to open his own restaurant in Cahors, "Chez Suzanne" (in homage to his grandmother), with his partner Justine Basin (who was also his second in the kitchen at the château...) in place of "Fil des Douceurs", facing the splendid Valentré bridge. The decor has been completely redone to create a bright, comfortable setting (with well-spaced tables), even if the setting lacks a little warmth. The chef knows what he's doing: a fine selection of local, seasonal produce, masterful cooking, judicious seasoning and carefully thought-out presentation, as with the starter of asparagus, razor clams, haddock and arugula sabayon, the line-caught pollack, spring stew of broad beans, peas and yellow oyster mushrooms in a white wine sauce, as with the shoulder of lamb confit, white asparagus cooked en papillote, full-bodied jus. A pleasantly simple strawberry dessert, a warm welcome and attentive service from Justine, a very fine wine list (around a hundred references) with an emphasis on local vintages, at appropriate prices, but with an obvious lack of non-alcoholic products. We're looking forward to what's to come, with a menu perhaps a little richer in choice.
