A beacon of gastronomy in the affluent suburb of Saint-Maur-des-Fossés, Le Brouard has clearly grown since our last visit. Simon Flaouter's restaurant, winner of the Gault & Millau 2024 Award, has gained in confidence. The €25 lunch menu reflects the vitality of the house. In the evening, seasonal bistronomy is the order of the day, with celery apple tartlet, venison rib, gorgonzola squash gnocchi, and a pastry that has found its harmony. Not all is "signature" yet, but the whole remains masterful and committed. A warm welcome and a fine wine list featuring a wealth of independent winemakers. Don't hesitate to follow the recommendations of Timothée, the sommelier, whose advice combines pedagogy, relevance and real bias without elitism.
