In the heart of the small village of Sare, this former Compostela relay built in the 16th century is today one of the most attractive stopping places in the Basque Country. Owned by the Fagoaga family for three generations, this property, a member of the Collectionneurs, comprises three old houses set around a flower-filled garden, and boasts 15 cosy rooms and suites with exposed beams, thick carpets and floral fabrics. Chef François Hubert, a native of Briançon, takes the taste buds on a journey with his inspired cuisine, rich in spices, colors and textures. Also worthy of mention is the Arraya boutique, featuring a selection of local crafts (Basque linen, hand-sewn espadrilles, leather goods by Maison Laffargue...) and delicacies (Brana brandy and superb black cherry jams...).
