Having worked with Jean-Michel Lorain and Michel Vignaud in Chablis, as well as at Richebourg in Vosne-Romanée, Jean-Raphaël Persano is a native of the region, with a knowledge of both tradition and modernity. The result is a cuisine of the highest quality, served in a charming house on the outskirts of Sens. You'll be able to try the cream of green asparagus, poached egg and crispy ham chips, the line-caught saithe, saffron-flavored black rice like a risotto and beurre blanc with a béarnaise sauce, or the pork chop with herbs, pommes duchesse and reduced pork jus. We finish with a strawberry tart, light pistachio cream and opaline tuile. Tasting menu €62.
