Chef's Restaurant As you drive down the A5 motorway into Burgundy and branch off to find this charming restaurant on the outskirts of Sens, you'll encounter not just a restaurant, but also an energy and a passion, that of chef Jean-Raphaël Persano, who trained at Lorain, among other establishments, and who has been around the block a number of times before embarking on this exciting adventure. The plates are well laid out, the produce seasonal, well prepared and well presented: grilled white asparagus, yuzu hollandaise sauce, roast duck fillet with herbs, peas and rhubarb, tangy jus, speculoos cookie cheesecake, vanilla mascarpone cream, speculoos ice cream for a pleasant, well-executed sequence at €39. Complete cellar with 500 references, dedicated, smiling service.
