Chef's Restaurant It's a favorite stopover for business people and professional travelers in the region: this handsome hotel, the Lorain family's second home, is well placed, practical and welcoming, and the table benefits from the contribution of loyal chef Jérôme Joubert, in place for fifteen years after a stint at Derbord et Blanc. Regional cuisine is highly represented, with attractive formulas, including the €45 "Terroir" menu, worth its weight in gold: creamy pig parmentier with lentils and shavings of Morvan ham, fricassee of free-range chicken with white asparagus, smoked potato crush, sweet garlic cream and offal toast, vanilla, lemon and mandarin vacherin, lemon verbena Suzette sauce. Full cellar, naturally rich in Chablis and Yonne red wines.
