Gault&Millau's review 2025

Unquestionably one of the finest hotels on the Riviera! On the heights of Monte-Carlo, the Hermitage has been restored by decorator Pierre-Yves Rochon, who has infused timeless, refined luxury into the 278 rooms, 76 suites and 12 Diamond Suites, dressed in wallpapers by the Zuber manufacture and furniture in azure hues. Here, breakfast is served under a superb Gustave Eiffel glass dome, Yannick Alléno's exquisite cuisine is savored on the terrace drowned in jasmine and olive trees, and luxury boutiques line the galleries. For a wellness break, guests are spoilt for choice between the hotel's very chic spa, the extraordinary Thermes Marins Monte Carlo swimming pool, which can be reached via the basement, or the Monte-Carlo Beach Club, facing the azure sea...
