With a now massive and steady influx of tourists—particularly from Paris—into the narrow streets of the “City of Roses,” Veules’ restaurants have a bright future ahead. Paul Vatelier, last year’s Regional Young Talent, has everything it takes to succeed in this business, which is so well-located on the main street. Surrounded by a young, highly motivated team, he has already built up a clientele by deliberately capitalizing on the influx of visitors from major cities, offering here the full range of trendy dishes—Korean-style fried chicken, grilled octopus with XO sauce, and tuna tataki—while largely setting aside local specialties except for a few nods, such as Veules oysters (a must, of course), trout roe, and Normandy beef for the hand-chopped tartare. On the plate, the culinary expertise is undeniably present; the seasoning is spot-on and the flavors are delightful right down to the red-berry cheesecake—a bit unremarkable, but a testament to the chef’s skill. A bit of effort in curating the wine cellar, a thoughtful selection of wines by the glass, and this modern atmosphere that stands in stark contrast to the norm—all assets worth preserving and building upon.
