Chef's Restaurant This restaurant is one of Ramatuelle's hidden paradises. On the Route des Crêtes, just a stone's throw from the Escalet beach, La Réserve is an invitation to quietude and rejuvenation. At the helm of the kitchen, Eric Canino puts his perfect knowledge of Provencal and Mediterranean produce to good use. The result is expected, perhaps a little too much so, but brilliant. The reception, which is very young, and the service in the dining room are not quite up to scratch and, with all kindness in the world, we wish the young team some further training in the art of service. As for the cuisine, the flame-burnt oysters (with an astonishing hazelnut praline marriage), mushrooms and celery and oxalis crab will surprise you in a good way. Dishes are more classic, but as well prepared as ever. The excellent turbot is cooked au naturel, with an anchovy-infused smoke, while the magnificent red mullet is accompanied by an elegant head jus. The chef also loves local produce: you'll no doubt succumb to this Bresse poultry and lobster, one of the house musts. Desserts are a step down. The lemon-infused madeleines get a little lost in the tangy fromage frais, but chocolate lovers will undoubtedly choose this beautiful soufflé, crispy gavotte, whisky and roasted vanilla. Faced with the elements, this beautiful boat will undoubtedly overcome this sea that's become a little too calm... and tomorrow hoist its mainsail to set sail for new conquests.
