In the heart of this magnificent medieval village, the hotel-restaurant de la Capitelle, integrated into the town's ramparts, is as much a place of history as it is an opportunity to discover Sylvain Croce's cuisine, with its focus on the region. The chef imagines a bistro-style cuisine tailored to today's tastes, with a masterful touch: pumpkin velouté and Corsican mandarin orange, grandma-style calf's head and gribiche sauce, crispy sweetbreads, morel cream and potato cake, 100% chocolate entremet and cocoa sorbet.
