The medieval village is superb, and this beautiful house, set on the threshold of the ancient ramparts, has it all: style, tradition, but also regional roots, thanks to chef Sylvain Croce. The table looks great, and the €35 Plaisir menu is a fine example of what's on offer here: mushroom tart with herb ice cream, Mère Maury ravioles with smoked pike-perch, creamy leek and lobster bisque, veal escalope stuffed with Vercors blue cheese and glazed with walnut wine... Right through to dessert, the choice is the right one, with Valrhona olive oil macaroons and Tonka bean mousse.
