Remarkable Restaurant A native of the region who returned to his homeland after honing his skills with Pierre Orsi and Pierre Gagnaire, we first got to know him at his Crest address before finding him in his native village of Grane, where he runs this beautiful hotel-restaurant with his wife Julie Bonnet. It's a fine expression of the Drôme, with its minimalist, country-style decor, revealing old flagstones, rough beams and stone, and local produce, such as flowers and herbs from Mr. Raillon in Saint-Vincent-la-Commanderie, pigeon from Mr. Chabert and regional cheeses selected by the Marchand brothers. The weekly menu offers the most sensitive vision of the seasons, with ideas in good rotation without ever forgetting the basics: extra duck foie gras, pumpkin, hazelnuts and green lentils from Le Puy; roasted Mediterranean sea bream, artichokes and shellfish jus; braised squab, confit leg, grapes, beet and carcass jus; two-course dessert with seasonal fruits and chocolate.
