Sébastien Bonnet has regained his usual vigor, and his restaurant, Kléber, remains a powerful gastronomic draw for the entire canton. Over the course of some twenty years in the region, Julie and Sébastien have come to know their clientele well and have learned to tailor their offerings—both in terms of menu and pricing. Interesting flavor pairings and masterful technique result in dazzling dishes: sea urchin with cauliflower and a land-and-sea sauce; pink-roasted squab with confit thighs, quince mousseline, and vin jaune sauce… A connoisseur’s wine cellar spanning the entire valley.
