A magnificent stone building in the heart of the Drôme Provençale, embodying the gentleness of the South, between traditional dishes and period architecture. Gaël Faure creates market cuisine with a contemporary twist, revisiting the classics with great intelligence. Seasonal vegetables, both raw and cooked, are featured in a flan of semolina with rosemary, honey and mustard chantilly, a fillet of sea bream, carrot with kumquat, quinoa and sauce vierge, guinea fowl with black garlic, roasted butternut, mashed potatoes with olive oil and port jus, a dome of chocolate gianduja, cocoa streusel and pistachio ice cream.
