Remarkable Restaurant IMA has had a facelift. Not just the facade (which has gone from brown to green). However, there's no interior revolution: the central, open kitchen is still there, as is the much-appreciated counter that brings you closer to the action. The "high" tables have disappeared, and the ambient noises are now more subdued. So regulars are not put off, and are happy to rediscover the sober elegance and warmth of the place. "A warmth that Julien Lemarié masters to perfection with the judicious use of a Japanese barbecue or a blowtorch that transcends the beauty of scrupulously sourced products (poultry from Olivier Renault, for example, or butter from Thierry Lemarchand...). The Japan and botany that inspire our cuisine are expressed by the presence of dashi, shiso, miso, seaweed, black lemon, soba, sake, tagete, oxalis... an exuberance of perfectly coordinated flavors, even if the spicy notes are sometimes very present. Beautiful late-season tomatoes are paired with black garlic, ginger and wild flowers; mackerel with black lemon, fennel and amaranth; duck with smoked eggplant and cabbage; and figs with black sesame and yuzu. Service, sometimes provided by the brigade, is fluid and attentive. A committed and seductive cellar, including saké.
