Remarkable Restaurant He does what he has to do, and he does it well. Sylvain Guillemot, if we follow his career path to the letter, has not changed his trajectory. He's been through the powdery trappings of the grand gastro, with all its glitz and glamour, and has come back, continuing on his path towards the truth of the product, the one he's always advocated. Today, the house is in harmony with the plate: a pretty mansion set on the banks of the Vilaine, like a postcard of a Brittany full of laughter and proud of its riches. All you have to do is follow his seasonal menu, which can be arranged in a number of courses according to your appetite for discovery: we start in the garden with the pick of the moment and fresh goat's cheese, before pressed crab, zucchini and lemon balm, monkfish in its radiant simplicity and celtuce, beef eggplant fig, caper and nasturtium and rhubarb hibiscus (the fashionable marriage here, full of gaiety and balance, like a pavlova) with the scent of verbena. A quiet atmosphere and a clientele of connoisseurs, a cellar forged over the years with intelligence to obtain attractive prices that don't add to an already very reasonable bill.
