Chef's Restaurant Jérôme Jouadé, "l'enfant du pays", doesn't really have to trudge around to stock up on fruit and vegetables, herbs and aromatic plants... He has everything, or almost everything, at his fingertips, in this vast complex built around a 19th-century château in the Rennes countryside. A hotel with original, futuristic lines, seminar and reception rooms, several dining venues and styles, an orchard and vegetable garden, and vast asphalt parking lots. Jérôme works on the hotel's 1st floor, which features a circular, panoramic room overlooking the estate. Warm, luminous and uncluttered, its aesthetics are particularly meticulous. He can count on a friendly, elegant and committed service. His cuisine, incisive and harmonious, can be discovered through an imposed "blind" menu. You're invited to play and guess what you've just tasted. You may not be an absolute fan of this playful staging. But that's not the point! We were seduced, for example, by this iodized starter composed of 3 relevant "flashes" around whelk, scallops and prairie, beautifully combined with citrus or spicy notes. The sea continues with this beautiful cod cooked at low temperature and enhanced by sorrel, squash and a hint of ginger. The tender pork tenderloin is enhanced by delicately peppery accents and cabbage in different textures. Accompanying the dish is a spicy cold salad in a surprisingly tasty vitello tonnato style. Finally, the creamy rice pudding ("sourced" from Camargue) is served with custard and puffed rice. For good measure, we add a caramel "Liège" waffle topped with rice pudding espuma. Classic and regressive par excellence, lightly executed. The wine list testifies to a real interest in the subject. A wide choice at all prices (or almost!). There's already a way to treat yourself for around thirty euros. Anjou from Clos Galerne, chinon from Martine Budé, sancerre from domaine Vacheron, cheverny from Hervé Villemade, côte-rôtie from Maison Stephan or domaine Vernay, minervois from J-B Senat, faugères from Didier Barral, savoie from domaine Giachino...
