Gourmet Restaurant Opposite the little station, here's a room run with rigor by aesthetic patrons: the tables are well laid and the walls decorated with pretty paintings by Daniel Gasser. Served as a "one-woman show" by an experienced owner, the cuisine is well worth a visit for its value for money. Chef Louis Ciolfi, who cut his teeth at Michel Chabran's, Pierre Gagnaire's Sketch in London and L'Arnsbourg during the Klein era, creates a clean, precise cuisine with undeniable clarity of taste. We love the lean for its freshness, the precision of its cooking and the lively accompaniment of herring roe and smoked paprika sauce. The egg is indeed "perfect" with its mushroom velouté, which has more flavor than the accompanying truffles. Thanks to the low-temperature cooking technique, the veal is melt-in-the-mouth, even if the juices seemed a little too thick. We conclude with a dessert plate, the base of which is entirely occupied by vanilla gelée, topped with a chocolate cremeux that's well-balanced in taste, and a soft pear sorbet, no doubt turbinated at the minute. The experience is somewhat tarnished by a monotonous atmosphere due to the lack of entertainment in the dining room and a shortage of staff.
