Remarkable Restaurant This year, we returned to the fine chiselled work of Baptiste Poinot, a well-trained chef who moved on to Pic's Grand de Demain in 2012. This is a large-scale, yet human-scale restaurant, with ambitions limited by the small number of dishes on offer (we still operate here, and have done so for some ten years, without a menu, just a set menu), which doesn't prevent us from appreciating the quality of the plates served identically to every table at every service: sophisticated and pleasing aperitif bites, beautiful scallops, fleshy and melt-in-the-mouth, with mushrooms, in various textures and cooked with coffee sabayon, Archiane trout with crunchy celery and purée, pear and hazelnut with yellow wine sauce, an elegant and earthy dish executed with precision, and the more classic poultry albuféra with poultry juice and its cromesquis drumstick. In this intimate setting, don't count your time (3h seems to be the measure in the evening) and enjoy dedicated young service that takes the tone of gastro chic. A fine wine list, partis pris, sure values (Gangloff and Jean-Louis Chave in verticals) and real bargains on big pins (clos Sainte-Hune for example).
