The restaurant’s second dining room is a restaurant in its own right, thriving in its own right. Louis Chabran, with the help of his father Michel, has given it a fresh new direction, embracing modernity and current trends while building on the solid foundation of the family-run inn: sea bream carpaccio, grapes and verjus with tonka bean espuma, crispy pork belly with roasted and spiced plums and old-fashioned mustard cream, semi-cooked tuna in an olive crust, roasted duck breast with duck leg in cromesquis, onion and fig tartlet, and caramelized poached pear. The essence of the restaurant is captured in its beautiful set menus, including the highly appealing “Séquences” at €55. Dedicated service and an excellent selection of Rhône wines.
