The recipe is unstoppable. Firstly, the setting, with the medieval village of Èze, a rocky outcrop that spills into the Mediterranean; secondly, an establishment that can be discovered as you stroll through the bucolic lanes; thirdly, a genuine, cheerful welcome and service; and finally, chef Justin Schmitt's cuisine, which is as upmarket as ever. These are the ingredients of a success story that every visitor will succumb to. And if the dishes are as beautiful as the scenery, they are no less memorable. For lunch, to take full advantage of the view, the two three- and four-course menus at €85 and €110 are a delight. The harlequin-shaped tomato, the ultimate tribute to this sunny fruit, followed by the perfectly cooked leaf-to-leaf cod and chard, accompanied by its Japanese artichoke compression with nori seaweed and plum vinegar, on a milky bone juice perfumed with vadouvan curry. Finally, farmhouse poultry, contised with verbena, escorted by chanterelles and fresh almonds, where roasted apricot, potato and a reduced jus marbled with yellow wine-infused cream, create a surprise on the palate. Joséphine Lutz's sweet treats round off the adventure in fine style, with a lemon sphere with praline heart and basil sorbet. The cellar, with its 200-odd references, leaves plenty to choose from.
