Remarkable Restaurant The best Japanese table in the South of France is undoubtedly nestled in the luxurious Métropole, under the expert direction of Takeo Yamazaki, who has been in charge of what was Joël Robuchon's "Japanese restaurant" for some fifteen years. It's all there: the codes, the protocols, the cuts, the freshness and certain recipes from the fusion era (black cod miso, for example). If you're not counting, the eight-piece omakase sushi sashimi for €98 is a good option, but you can also tailor-make your own menu from the extensive menu, choosing, for example, artichoke salad, snow crab and seaweed, carpaccio of yellowtail with avocado cream, tempura and gyozas, meat or fish teppanyaki (a good idea with the méli-mélo, fish and shellfish, at €66). Discreet, highly efficient service, classic desserts, including mochi, and a good introductory Fuyu menu at €149.
