Tom Meyer has placed at the helm of Les Remparts one of his good lieutenants, a former sous-chef at the Granite in Paris. It goes without saying that the business is in good hands in this privileged setting - that of the Chèvre d'Or with its extraordinary plunging view - for a cuisine largely inspired by Nice and Mediterranean products: beautiful variation on asparagus and Piedmont hazelnuts, saddle of rabbit with country bacon, magnificent and simple version of red mullet (the fish soup reduction is a dish in itself.) before the varied dessert buffet. The service is up to the task, professional and smiling, with the usual attention to detail, and the juices and sauces, very carefully prepared, remain on the table. Wine cellar on a shelf, with some twenty wines by the glass.
