Prestige Restaurant A palace on a human scale, it's almost relaxing. A chef who doesn't play to the stars, and service that's genuinely kind and attentive, sometimes that's relaxing. This is La Réserve; its long history has kept it on the Reserve, of quiet luxury and sober refinement. And if the sign "Restaurant des Rois" sounds a little pompous, at the table, everything is gentle: the marvellous seafront terrace lets you discover the Mediterranean and Cap Ferrat behind the Venetian balustrade, while the piano notes of French standards, from Michel Legrand to Aznavour, play. Julien Roucheteau also strikes the right tone: his cuisine is precise, with no real rough edges, and yet it asserts itself, confirms itself, makes its mark: the Bordighiera gambero, raw with the well-dosed reduced carcass juice, quite powerful with its chanterelles, makes a beautiful, balanced dish, to highlight the product. Red mullet à la flamme is chewy and textured, with rhubarb and olive, the juice from the bones infused with pits. And while the chef doesn't aim for show cooking, you're never safe from one of his secret biscouettes, such as the well-lacquered sweetbreads with tomato tatin and hyssop perfume, as tame as a picture, but flanked, in a small bowl on the side, by a breaded veal ear, a crunchy delight, a little peggy, very good... On the table, very good Normandy butter, quality bread, attentive service right up to the rhubarb dessert. The cellar is in the same mood, no excess of gaudy labels, but pleasant bottles showing a good knowledge of the regional vineyards, and offering a fairly wide choice at around €100.
