In this charming house, tastefully decorated in the Provençal style, Quentin Lailler has free rein and works with the right spirit to blend local flavors, modernity, and timeless gourmet recipes, such as his trout koulibiak or beef Wellington. The chef, whom we first met at the Hôtel de Tourrel—after stints at Rouquette, Pras, and Viel in Baumanière—knows his craft inside and out, capable of showcasing it in a superb four-course tasting menu for 75€ based on seasonal ideas, tomato and egg yolk, trout with cucumber and caviar, and poultry with vin jaune and spelt, followed by a delicious fig dessert. Wines from the Les Baux region, of course, and a warm welcome marked by thoughtfulness and a smile.
