Chef's Restaurant A veritable UFO on the Var coast, this telegraph takes you to the heights of modernity and coolness, welcoming all forms of artistic expression within its walls: exhibitions, conferences, concerts, readings... and cuisine! Located on the first floor, this Beam! already carries in its name the spirit of something explosive, always on the move, overflowing with ideas, well brought together in a €55 menu. The place is often packed to the rafters, especially in the evenings, when people gather in this large Manhattan loft-like room, in a spirit of communion under rhythmic music. Between cocktails and natural wines, a brioche de la rade, parsnips and egg yolk cream, truffle vinaigrette, a flame-burnt fish of the day, cauliflower with seaweed and lemon, roasted onion dashi, poultry from the ferme du bon plant in Hyères, asparagus from Mallemort and reduced jus, pear and pistachio entremet, heart of melting caramel and hazelnut ice cream. Reservations highly recommended.
