Chef : 1 restaurantArnaud Tabarec turned to the restaurant business thanks to his brother. "He was a sommelier. I could see that it made my parents proud, so I did what he did," he laughs. After being named France's Best Apprentice, the Burgundy-born chef trained with Jacques Lameloise in Chagny (Saône-et-Loire), withHervé Domi at Auberge des Templiers (Loiret), Gilles Goujon at Auberge du Vieux Puits (Aude), and Stéphane Rouville at La Galupe (Nouvelle-Aquitaine).
In 2010, he flies to Singapore to join Emmanuel Stroobant at Le Saint Pierre. On his return to France, he worked with Antoine Westermann at the Drouant restaurant in Paris. He then became head chef and director of catering at Le Roof, the restaurant of the Five Seas Hotel in Cannes. "That was the consecration," he recalls. At the same time, in 2016, he hosted the French adaptation of the TV show "Hell's Kitchen".
After seven years in Cannes, Arnaud Tabarec needed a change."I wanted a place more focused on ecology, on wine, to shake up the relationship we have with our cuisine."His meeting with François Veillon, owner of Le Telegraphe in Toulon, opened up new avenues for him. In 2020, he created Beam! within this lively structure. Two years later, he was awarded the Terroir d'Exception trophy at the Gault&Millau Tour PACA and featured in the 2023 edition of book 109 - Le Sang neuf de la gastronomie française.
