Gault&Millau's review 2025

This hotel, housed in the former priory of a 12th-century Benedictine abbey, was purchased in 1999 by Alain Ducasse, who renovated it in 2011 to transform it into a luxurious, bucolic retreat. The estate consists of a succession of kitchen gardens, vineyards and flower-filled gardens, shaded by century-old cypress trees and refreshed by ponds and fountains. Behind the powder pink façade of the main building are 10 rooms and suites of warm, intimate luxury, all bearing the names of women who have marked the history of the house. The estate also boasts a heated outdoor swimming pool set in the remains of a Roman house and, of course, a prestigious restaurant headed by chef Nicolas Pierantoni.
