Clémence and Rémy are at the helm of an address on the Mourillon that's as cheerful as ever. This couple, who met on the island of Saint-Martin, successfully opened their address in 2019, defending a playful bistronomy, revisiting traditions. We discover onion soup with miso, turbot fillet, gremolata with black olives and sun-dried tomatoes, parsnip purée and seasonal vegetables, a knob of pork cheek confit with Brittany cider served frayed, creamy polenta with chives, vegetables, a pretty financier with Provence honey, poached pear with sweet spices, hot chocolate sauce and caramelized almonds. Cellar with some good references (Ginglinger, Terrebrune, Ray Jane, Henri Bourgeois...).
