Chef's Restaurant
Hopes were high, but Vivien Sonzogni has exceeded them. This proud contemporary building on the wine-growing commune overlooking Arbois already had a history, and the young chef, winner of the Gault&Millau award, has done more than just prolong it. His cuisine is already as much his own as it is personal, the spirit of the house has been preserved, and Noémie in the dining room brings as much joie de vivre and professionalism as erudition to Vivien's cooking. A team effort, with Louise and Violette in pastry, Hugo in sommelier, that comes to fruition brilliantly at every service, with precision and sobriety, highlighting the star ingredient: asparagus with yellow wine sabayon, rabbit, roast saddle and stewed legs with mustard, strawberry, rhubarb compote and vanilla cream. Menus from €60 to €94 cover the entire menu, and the cellar is naturally well-stocked with Jura wines.
