Gourmet Restaurant The menu changes almost every shift, depending on the market, what's been picked, what you're in the mood for, in this well-appointed stone-and-beam house ten minutes from Arbois. With Zoé Boinet and her chef Byron, who came through the Doyenné de Saint-Vrain, everything is spontaneous and joyful, but not improvised. For the well-designed, decisive plates shake the coconut tree for good reason: sea bream celery capers and garum, mackerel yoghurt cebette wasabina, veal tongue almond lemon confit oregano, plates you're unlikely to see again, so fertile is the imagination here, under the house slogan "lively cuisine, vibrant wines and white sheets", the place offering a few guest rooms.
