Gault&Millau's review 2025

Nestled in an 18th-century mansion that retains its pink façade and Italian-style colonnades, this hotel is above all a family affair. That of Catherine and Romuald Fassenet, who acquired the property in 2007 to give Romuald the freedom to create a cuisine d'auteur (unanimously acclaimed), but also to offer much more: a warm welcome and shared moments. The proof is in the 7 rooms, all designed with the well-being and serenity of their guests in mind, with their streamlined furnishings, soft carpets and spacious bathrooms. All overlook the 2.5-hectare grounds, which include an outdoor swimming pool and meadows shaded by century-old trees, making you want to extend the experience by enjoying the miraculously preserved natural surroundings. The Chaux forest is just a stone's throw away, as is Mont-Roland, which offers one of the finest views of the town of Dole and the infinite gentleness of the Côte-d'Or countryside...
