This is undoubtedly the most beautiful hotel in Arbois, a magnificent 5* house entirely renovated in a classic style, with period furniture and remarkable finishes. The restaurant room, with its herringbone parquet flooring, marble tables, moldings and beautiful gold-leaf clock, immediately establishes a remarkable sense of chic and luxury. The menu, devised by Dijon chef David Zuddas, features classic regional recipes, beautifully executed: white asparagus, trout from Les Planches in gravelax, verbena and black lemon, a beautiful organic egg, roasted hazelnuts, mushrooms and wild garlic; oriental-style pigeon breast, confit leg, carrots, chickpeas and tangy date condiment; strawberry dessert, raw cream, soft meringue, arugula and olive oil.
