Chef's Restaurant Lisa and Jérôme met at Jean-Paul Jeunet's before setting up on their own, she in pastry and he behind the stove. The address is a vibrant tribute to the Jura, both with the splendid view over the Cuisance, and in the dishes, where the regional terroir and the seasons are very much to the fore. The compositions are sophisticated: green asparagus with iodized sea spray, shellfish and light wild garlic mousse; brook trout with artichokes, spinach coulis and grilled fumet risotto; half-pigeon from the Quintard house seared on a Japanese barbecue, strong juice with smoked Penja pepper, cereals and peas with bacon; strawberries in crispy thin sheets, geranium rosa and rose buds.
