An institutional hotel-restaurant in Arbois, passing the years with wisdom and constancy. In the kitchen, Nadine Troussard works Jura traditions with undeniable savoir-faire. These include white asparagus with wild garlic royale, hazelnut butter emulsion, spice-marinated akami tuna, grilled serra cheese and black garlic persillade, Jura farmhouse poultry with morels and yellow wine, gnocchi with Meaux mustard and chicken crispy. Excellent cellar with over 1,500 references.
