Gourmet Restaurant This is the bistro of yesteryear and always, with its Basque classics and atmosphere. Go straight for the slate of the moment, which concentrates the good flavors: chipirons fricassee with Espelette pepper, hake pastilla with white asparagus, strawberry vacherin, all for less than €50. And if you're in the mood for a Basque-Landes meal, go for the terrine de campagne or Dupérier foie gras, veal axoa and apple tourtière. Good cellars in the southwest and other regions.
