An astonishing marine-Israeli direction for this table in the heart of the Marais, where the Levantine coast serves as the foundation for chef Yonatan Mary's ideas. Working in the memory of his Moroccan and Iraqi roots, the chef composes a cuisine at the crossroads of influences, rolled out in an interesting fish menu at €109. Highlights include yellowtail in a crisp cup, mint-infused tomato consommé, balsamic-candied apple and cucumber mousse, red tuna on a crunchy trompe-l'oeil, apricot-sriracha coulis and lemon crème fraîche, salted corn ice cream, sautéed corn, miso and parmesan custard, kubaneh bread crumble and chive oil, or rose cremeux, caramelized kadaïf, ice cream and frosted goat cheese tuile, white chocolate pistachio ganache. Good service.
