Chef's Restaurant The whole of Paris is buzzing, stamping its feet and flocking to rue des Gravilliers, scratching at the door as if it were the gates of a major brand for black friday. This craze is undoubtedly well-deserved for Manon Fleury, priestess of eco-responsibility and plant-based food, and proclaimed archetype of modernity at the table. Everyone learns from each other, the young team and the customers alike. It's often pleasant, sometimes a little less so (when someone suggests you speed up because the table has to be cleared for the next service, when kindness doesn't replace clumsiness and forgetfulness...) but you were lucky enough to be there. To taste this marvel of asparagus, sesame and lemon, to which two investigators who came within a week of each other both gave 16/20, to be a little less thrilled by the rice ball, or this mishmash of Swiss chard sausage with fennel seeds and peanuts, to finish on two beautiful desserts, kumquat and Jerusalem artichoke varying textures and flan infusion prune full of sensitivity and intelligence. So much talent and determination will undoubtedly soon lead, as everyone hopes, to a more accomplished and uniform whole, including service, to prove that respect, communion and empathy can also lead to excellence. A varied, high-quality wine list, with steadily rising prices.
