Her cuisine is deeply personal and elegant, offering a culinary experience that is uniquely close to nature. Having trained under Barbot, Manon Fleury creates dishes that are both technically precise and creative, managing to be both inventive and light. Her €95 lunch menu showcases a beautiful sensibility, featuring a starter of asparagus and seaweed, a combination of rhubarb and lobster, a salad centered around apricot and tuna, and a Far Breton served with an infusion and tanghulu. Excellent food and wine pairings.
