Charlotte Bertrand's cuisine is always rooted in the terroir. In this house steeped in tradition, it's important to keep its heart and soul, and this young chef has added her own touches, her own roots and her own experience to offer dishes that strike a balance between historical cuisine and travel cuisine. The flavors are there, the plates are gourmet with well prepared seasonal products: potato and eggplant millefeuille with tikka massala, Banka trout with tiger leche sauce, monkfish returning from the Saint-Jean-de-Luz fish market that day, confit with lime, zucchini mousse with coriander, crunchy fennel, celery stick condiment and Thai curry paste, combawa oil and almond and lime emulsion... Finishing with a lovely blueberry matcha dessert, lemon madeleine cookie, blueberry confit and chocolate cream.
