Meilleur Ouvrier de France charcutier, Arnaud Nicolas decided a few years ago to take the plunge and move into traditional catering. His menu is that of a no-holds-barred chef, not hesitating to pay homage to the recipes of yesteryear (his poultry and foie gras pâté en croûte is remarkable, as is his veal and lobster blanquette) while opening up to more contemporary creations, such as the highly successful sea bream tartare served with green beans and buckwheat siphon. Classic, gourmet desserts.
