It's a new chapter for Anthony Bisquerra, who worked his way from palace to palace (most recently at the Alpaga in Megève) before opening his own bistro. And in this new role, in this small, tightly-packed space on the gourmet rue du Faubourg Sainte-Claire, you can feel that he's really happy to be himself, bringing the plates to the customer, doing gastro without saying so, serving sauces separately in a copper cassolette, fine-tuning every detail to garnish an unbeatable €39 menu (extendable with additional dishes at €52 and €65). Cheerful appetizers, work on leeks, leek potato velouté abondance, variation on leek vinaigrette, beautiful pork loin set with pormonier condiment red cabbage sweet potato purée and a pretty jus serré, chocolate mousse and La Chinata chili in a nod to his Basque and Spanish origins (we find a little Espelette at the start of the meal). The cellar, forged with his former sommelier in Megève, who has now opened a boutique in Annecy, is already plump and relevant, with a good selection by the glass. Service is natural, precise and overflowing with kindness, and the room is logically full.
