Chef's Restaurant Set in a charming, unspoilt village on the Alsace wine route, this contemporary restaurant with Scandinavian decor plays the sober card: light-colored floor tiles, minimalist furniture, tables without tablecloths. The absence of a reception area and limited lighting, concentrated above the bar, give the dining room a slightly mournful ambience, which contrasts with the liveliness of the dishes. Right from the amuse-bouche, the inspiration of a Gagnaire alumnus is evident: asparagus espuma, kohlrabi with verbena, creamy carrot, all chiselled, playful compositions of great freshness. The meal then unfolds a surprise menu, full of balance and surprises: crunchy fennel and revisited bibalakas, morning peas married to a rich beurre blanc and a melting slice of guanciale (not easy to cut with a spoon), gray shrimp on a corn patty and zucchini purée, ricotta ravioli with turmeric and citron, served in a mushroom broth of rare subtlety. The yellow Alsatian poultry is cooked at a low temperature, giving it a melt-in-the-mouth texture, but the plate arrives completely cold and surprising. The desserts round off the meal with elegance, whether it's the raspberry and cassia sorbet or the apricots in Jura yellow wine with pumpkin seed praline and milk emulsion in a crispy shell. In the dining room, service is provided in all seriousness by a young woman who is perfectly informed about both the chef's approach and the products. Although we regret the absence of the owner - whose active and benevolent presence had marked a previous meal - her rigor seems to have left a lasting impression on the team. The cellar, entrusted to an affable and competent sommelier, gives pride of place to Alsace and a demanding selection of organic and natural wines, with well-chosen food and wine pairings. Despite a few areas for improvement - the bill was presented a little early, and the restaurant's service was casual - the experience is marked by a cuisine of conviction, creativity, precision and uniqueness.
