A choice stopover on the wine route, this traditional hotel and restaurant is just outside Colmar. Chef Henri Gagneux takes advantage of a beautiful room with a sculpted ceiling to celebrate his region, offering well-crafted classics. On the menu: marinated Guidat trout with sweet onions, chard salad with preserved lemon, fillet of sea bass with tobacco sauce, Paimpol cocos and fresh grapes, old-fashioned calf's head and, of course, Alsatian sauerkraut. For a change from the usual, the chef also offers unusual menus at €56 and €69.
