In other words, a chef who has been with the company for 18 years, who knows his producers and works closely with them, who pushes the envelope and encourages his teams. That's what's needed for a company of this size, which has been making its mark on the Beaune region for so many years. In his hands, those of his brigade and his teams, whether you're in the bistro or the gastro, everything will go smoothly. Exceptional products and royal treatment, on the scale of the house: roasted langoustines with green bean and raspberry tart emulsion, barbecued yellowtail in lemon ginger broth, smoked Corton pigeon, beet with fig and gingerbread... You can then conclude in grand style with the Grand Marnier soufflé and thank a perfectly trained and efficient service. As you'd expect, a huge Burgundy cellar to get you used to the climates, well commented by an erudite sommelier.
